WTH does that mean?!
I told Patrick I can't stand it when people think healthy food = crappy tasting food. HELLO! I wouldn't eat it if it didn't taste good... if that was the case I wouldn't have gotten fat in the first place, right?!Anyway, this recipe was super tasty and really quick to make but the only mistake I made was cutting the seeds out of the jalapeno because there wasn't any spice to the dish! This is the first time I've ever cooked with jalapeno (and halibut!) so I didn't realize all the heat was in the seeds. We just threw on some red pepper flakes to make up for it.
(makes about 5 servings)
Ingredients:
- 1 lbs. halibut, cubed into 1 inch pieces
- 3 med. tomatoes, diced
- 1 onion, diced
- 2 zucchinis, diced
- 1 jalapeno, minced
- 3 cloves garlic, minced
- 8oz low-sodium tomato sauce
- 1 tbs. olive oil
- salt and pepper to taste
1. After cutting the halibut and veggies, heat olive oil over medium heat and add onions and zucchinis. Cook till soft, about 6 minutes.
2. Add garlic, jalapeno, tomatoes, tomato sauce, salt and pepper and cook till fragrant.
About 3 minutes.
About 3 minutes.
3. Add halibut chunks and cook until flesh flakes with a fork. About 10 minutes.

Silly question -- but how do you create a nutrition label for your recipe?
I'm totally with you healthy does not mean bad tasting! It can be awesome! My coworkers are jealous of the yummy leftovers I bring in all the time. They are always surprised the nutritional stats!
That Patrick guy sounds like a really cool guy, haha! The food actually "looks" pretty good :)
All your dishes look great! I really want to try this Halibut dish out. I love fish.
Maybe you should open you own place up. I would definitely eat there.
